Advent Cookie Recipe – Sparkling Stars
Sparkling Lemon Stars
1 stick unsalted butter
1/2 cup sugar + some to decorate with
1 egg
1 1/2 cups all purpose flour
2 tablespoons fresh lemon juice + some for glaze
1 teaspoon grated lemon peel
1/2 teaspoon baking powder
1/8 teaspoon salt
Cream together butter and sugar – best done with a stand mixer. Add egg and mix till light and fluffy. Mix in remaining ingredients. Wrap dough in plastic wrap and refrig. at least 2 hours. Roll out dough on a well floured surface and cut out with star shaped cookie cutters. Transfer cookies to cookie sheets. Using a pastry brush, lightly brush all cookies with lemon juice, and sprinkle with sugar. (Makes the tops shiny and adds a lemon kick.) Bake 8-10 minutes at 350 / till golden on edges and bottom. Cool one minute on cookie sheet and then transfer to rack.
